Luscious Vegan Berry Parfait
- 0.5 cup cannellini beans cooked (drained, no salt or sugar added)
- 3 tbl desiccated coconut
- 1/3 cup cashews (soaked for 1 hr, if you can for a smoother result)
- 4 tbs plain soy yogurt (unsweetened)
- 1/2 cup dates (about 10 whole dates)
- 2 tbl lemon juice
- your favourite berries
Put all ingredients except berries into a food processor and process until smooth. If you feel you need more sweetness, add more dates or 1 tbs of date syrup.
Take a tall glass and layer the berries at the bottom, then 2 tbs of the dip, berries, dip and finish off with berries.
